Ingredients for Easter Dinner Cake

For White Part

Flour – ½ cup
Granulated Sugar – ½ cup
Cream -- ½ tsp
Sugar – ½ cup [powdered]
Egg Whites – 6
Vanilla – ½ tsp

For Yellow Part

Egg Yolks – 6
Granulated Sugar – ½ cup
Powdered Sugar – ½ cup
Cold water – 2 tbsp
Lemon Juice – 1 tbsp
Baking Powder – ¾ tsp
Cold Water –1 tbsp
Salt – 1 pinch

Method of the Preparation of Easter Dinner Cake-- White Part

Sift the ½ cup flour and ½ cup powdered sugar. Repeat it three times.
Beat the egg whites, till it becomes stiff.
Add cream of tartar, vanilla and salt and beat well.
Gradually beat in ½ cup granulated sugar. Sift a fourth of the flour mixture at a time over top, fold in.

Method of the Preparation of  Easter Dinner Cake Yellow Part

Beat the egg yolk and mix the juice and water well.
Sift the flour with baking powder.
Gradually add the granulated sugar, sift a fourth of the flour mixture at a time over top, and fold in.
Pour the batter in a greased baking bowl and bake in a preheated oven at 350⁰F for 40—45 minutes.
Invert and  cool.
Finally dust the dinner cake with powdered sugar.

Preheat the oven to 350⁰F
Mix the butter and sugar in a large mixing bowl until it becomes soft and fluffy.
Add egg yolk one by one and beat well.
Add flour into the sugar mixture and mix gently.
Add vanilla extract, almond extract and bourbon and whisk the mixture till it becomes creamy.
Add 1 cup of sugar into the egg whites and beat till it becomes stiff.
Add egg whites mixture into the flour mixture and add pecans. Mix well.
Pour the batter into lamb shaped pound cake mold and bake the batter for 1 ½ hours.
Allow the cake to cool for 10 --15 minutes.
Decorate with spices and serve.

Ingredients of Duck Roast

Duck – 1
Coriander Powder – 1 tsp

Heat oil in a pan and fry the sliced potatoes and sliced onion separately. Remove and keep aside.
Add the duck pieces in the same pan and fry. Drain the duck pieces and put into the gravy and cook for 5 minutes.

Ingredients for Karimeen Varuthathu

Karimeen [Pearl Spot] – ½ kg [4 nos]
Kashmeeri Chili Powder – 1 tbsp
Ginger garlic paste – 2 tbsp
Red chili powder—  ½   tsp
Turmeric powder – ½ tsp
Coriander Powder – 1 tsp
Black Pepper powder –1 tsp
Lemon juice – 2 tsp
Oil for frying
Salt to taste

Method of the Preparation of Karimeen Varuthathu

Remove the eyes, scales, and fins of the Karimeen and wash thoroughly.
Make gashes on both sides of the fish.
Mix all ingredients except oil and make a good marinade and apply it to the fish liberally.
Heat oil in a pan and fry the fish until brown and crisp.
Garnish the Karimeen Varuthathu with sliced tomatoes, sliced onions and wedge of lemon.

Cumin seeds –1 tsp
Coriander seeds –1 tsp
Turmeric powder –1/2 tsp
Red chillies –6
Green chillies -- 4
Garlic flakes –3
Ginger – ½ tsp [juliennes]
Salt to taste
Oil –2 tbsp

Method of the Preparation of Pork Vindaloo

Heat oil in a pressure cooker and add potato cubes and fry until it become light brown. Drain and keep aside.
Make a fine paste of coriander seeds, cumin seeds, ginger, garlic flakes, cloves, red chillies and cinnamon by adding vinegar.
Fry sliced onions, cloves, chopped green chillies, pepper corns, cardamoms, till the onion become transparent.
Add the ground paste and fry for 5 minutes or until oil leaves the sides of the pan.
Add the Pork and pressure cook until almost done.
Open the lid and add the fried potatoes, salt and 2 cups of water and cook for 10—15 minutes on low flame.
Add little vinegar and cook for 5 minutes.
Transfer into a serving bowl and garnish with fresh coriander leaves.
Pork Vinadaloo is ready to serve.

Leg of Lamb Easter Recipe

Lamb leg – 1
Garlic flakes – 2
Pepper powder to taste

Sprinkle the lamb with pepper powder, Chopped basil, rosemary and salt.
Now lamb is ready for roasting, so place it in a preheated oven and for 20-25 minutes for pound or meat thermometer registers 150⁰F for medium rare, 160⁰F for medium or desired degree of doneness.
Serve garnished with fresh parsley if desired.

Turkey Fry Easter Recipe



The idea of Fried Turkey is originated in United States, but it gaining the popularity in worldwide, do not stuff the Turkeys you plan on frying. You should never fry the Turkey indoors. Place the fryer outdoors. Don’t allow the children and pets near the cooking area.  Consume cooked Turkey immediately and store left over in the refrigerator within two hours of cooking.

Whole Turkey – 8 pound

Creole seasoning – 1 tbsp
 Peanut oil – 1 gallon

Method of Preparing Turkey Fry

Clean and remove the giblets and neck from the Turkey. Heat oil, in a Turkey fryer  at 200⁰c. Layer a large platter with food safe paper bags.
Rinse the Turkey and drain with a kitchen towel and rub the seasoning inside and outside of the Turkey.
Place the onion and Turkey with neck end in drain basket. Slowly lower the basket in to the hot oil to completely cover the Turkey.
Cook the Turkey for 30 minutes until done. Carefully remove the basket from the oil and drain the Turkey.
And allow to rest for at least 10 minutes. Enjoy your delicious fried Turkey.

Cinnamon Balls Easter Recipe

Cinnamom Balls a tasty treat for Easter. It should be stored in airtight container. They also freeze well.

Ingredients for Cinnamon Balls

Cornflakes crumbs – 2 cups
Soft Butter – 1 cup
Vanilla – 2 tsp
Sugar – ½ cup
Sifted Flour—2cups
Cinnamon – 1 tsp
Walnut or Pecan nuts – 1 cup [chopped]
Caster sugar or Icing Sugar – 1 ½ cups

Method of Preparing Cinnamon Balls

Crush the corn flakes in to crumbs. Blend the butter sugar and vanilla.
Sift flour with Cinnamon. Add the crushed crumbs and pecan nuts to the butter mixture and mix well, as well as the flour mixture. Mix gently and shaping into small balls and placing into greased baking sheets.
Bake at 350⁰F for about half an hour.
Remove when baked and roll immediately in icing or caster sugar.

Dates – ¾ cup [chopped]
Grape nut Flakes –2 cups
Lemon Juice – 2 tsp
Honey – 2 tbsp
Butter – 2 tbsp

Grated rind of 1 lemon

Method of Preparing Lemon Crunchies

Beat butter and marmalade. Add Bi-carb dissolved in boiling water Allow it to froth. Knead in other ingredients, adding grated rind last of all. Press into a square pan, make into squares and bake in a moderate oven about 25 minutes.
