Pork Vindaloo Easter Recipe



Pork Vindaloo is a popular recipe. It is a delicious Pork dish. Learn how to prepare Pork Vindaloo in this Easter. How does  it gets its name? Vin is for Vinegar and Ahlo means Garlic in Portuguese. But in India Aloo means Potatoes, so the dish is called Vindaloo.  

Ingredients for Pork Vindaloo

Pork – 1kg
Cloves – 3
Potato – 4 [peel and cut into cubes]
Green cardamom – 3
Onion – 2
Black Pepper Corns – 4
Sugar –1 tsp
Vinegar –1 tbsp
Cinnamon sticks –2
Cumin seeds –1 tsp
Coriander seeds –1 tsp
Turmeric powder –1/2 tsp
Red chillies –6
Green chillies -- 4
Garlic flakes –3
Ginger – ½ tsp [juliennes]
Salt to taste
Oil –2 tbsp

Method of the Preparation of Pork Vindaloo

Heat oil in a pressure cooker and add potato cubes and fry until it become light brown. Drain and keep aside.
Make a fine paste of coriander seeds, cumin seeds, ginger, garlic flakes, cloves, red chillies and cinnamon by adding vinegar.
Fry sliced onions, cloves, chopped green chillies, pepper corns, cardamoms, till the onion become transparent.
Add the ground paste and fry for 5 minutes or until oil leaves the sides of the pan.
Add the Pork and pressure cook until almost done.
Open the lid and add the fried potatoes, salt and 2 cups of water and cook for 10—15 minutes on low flame.
Add little vinegar and cook for 5 minutes.
Transfer into a serving bowl and garnish with fresh coriander leaves.
Pork Vinadaloo is ready to serve.
