Lemon Crunchies Recipe



Ingredients for  Lemon Crunchies

Flour – 1 cup
Oats – 1 cup
Coconut – ¾ cup
Sugar -- 1 cup
Butter – 6 oz
Marmalade – 1 tbsp
Boiling water – 1 tbsp
Bi-carb – ½ tsp
Grated rind of 1 lemon

Method of Preparing Lemon Crunchies

Beat butter and marmalade. Add Bi-carb dissolved in boiling water Allow it to froth. Knead in other ingredients, adding grated rind last of all. Press into a square pan, make into squares and bake in a moderate oven about 25 minutes.
