How to Make Christmas Fruit Cake


Ingredients for the Christmas Fruit cake

Flour – 10 oz
Butter – 10oz
Sultanas – 8 oz
Sweetened Condensed Milk – 1 tin [Full cream]
Glace cherries – 2 oz [chopped]
Almonds – 2 oz [chopped]
Currants – 8 oz
Peel – 4 oz [chopped]
Finely grated rind of one orange
Bi-carb – ¾ tsp
Lemons – 2
Salt – 1 pinch

Method of the Preparation of the Christmas Fruit Cake

Put the water, butter, chopped fruits grated rinds and condensed milk in a pan and bring to boil, stirring continuously. Lower the heat and simmer for 5 minutes, still stirring.
Sift the salt and flour together in a bowl. Stir Bi-carb in to the cooled, cooked fruit mixture. Stir the fruit into the flour mixture and mix well. Pour the mixture into greased bake tin and bake at 325°F for 2 ½ hours.
