Potato Pudding Recipe


Ingredients for Potato Pudding

Potatoes – 2 cups [peel and grated]
Sweet Onion – 1 large [peel and grated]
Self raising Flour – 1 tbsp
Butter 2 oz
Salt and pepper to taste

Method of Preparing Potato Pudding

Mix the grated potatoes and grated onions in the flour and add to the melted butter and blend well. Add the seasonings, and place in greased casserole. Bake in a moderate oven for 30 minutes.
Reduce the temperature and bake for further 35 minutes when there should be thick brown crust.
Serve hot or cold.

Leek Salad Easter Recipe


Young thin leeks blanch for 8 minutes in boiled water. Drain and chill well. Sprinkle with pepper and serve with French dressing

For French dressing

Lemon Juice – 2 tbsp
Oil – 2 tbsp
Green Herb [mint, oregano] – 2 tsp [fresh chopped]

 Meat – ½ kg
Onions – 2

Heat oil in a pan and sauté the sliced onions.
 Add the cooked meat and curry leaves and fry well.

Easy Chicken Curry Recipe


Ingredients for Chicken Curry

Chicken – 1 kg [cut into medium pieces]
Onion – 1
Ginger – 1 piece
Garlic – 6 cloves
Cinnamon – 1 piece [powdered]
Cloves – 6 [powdered]
Coriander powder – 1 tbsp
Turmeric powder – ¼ tsp
Chili powder – 2 tsp
Tomatoes – 3 [chopped]
Pepper Powder – ¼ tsp
Salt to taste
Oil – ¼ cup

Method of Preparing Easy Chicken Curry

Grind the onion, ginger, garlic in a mixer grinder. Heat oil in a pan and fry the onion, ginger and garlic paste for 5-8 minutes. Add the pepper, cloves and cinnamon powder and mix well.
Add coriander powder, chili powder and turmeric powder mixer with little water. When the aroma arises add the chopped tomatoes and fry for 5 minutes.
Add the chicken pieces and mix gently. Add some boiling water and little water. Cook the chicken till tender. Serve hot with rice or chapathi

Orange Cake Recipe


 Ingredients for Orange Cake

Flour – 250 gms
Sugar – 250 gms [powdered]
Egg yolk – 4
Egg white – 4
Butter—1 tsp
Baking powder—1 tsp
Orange rind – 1 tsp
Vanilla essence – 1 tsp
Sugar – 2 tsp

Method of Preparing Orange Cake

Sift together flour and baking powder. Mix butter and sugar, add egg yolk one by one well. Add the ground orange rind pate and mix again.
Add the sifted flour and milk to the butter mixture and mix alternately. Beat the egg white gently, add the essence to it and beat again Sprinkle the sugar and beat again.
Add the whisked egg white into the prepared cake batter. Pour the cake batter into the greased cake tin. Fill only ¼ of the tin. Bake the cake in pre heated oven at 400° F forn35 minutes.

Ingredients for Nut Cake

Flour – 2 ½ cups
Sugar – 1 ½ cups
Evaporated Milk – ½ cup
Baking powder – 1 ¾ tsp

Cola – 250 ml
Plain Flour – 250 gms
Sweetened Condensed Milk – 1 can
Butter – 125 gms
Soda Bi-carb – 1 tsp

Method of the Preparation of the Cola Cake

Prunes – 1 cup
Castor Sugar – 1 cup
 Cold water – 2 cups

Method Preparing Norwegian Pudding

Soak the prunes in cold water for 1 hour. Boil until soft in same water. Stone the prunes, crack the stones and remove the kernels, simmer these with prunes, sugar, cinnamon and salt for 10 minutes in boiling water.
Add littile cold water into the corn flour and make a paste, add to the prunes and stir constantly while cooking for 5 minutes. Add lemon juice and keep in refrigerator. Serve with cream.

Melt butter and sugar with the syrup, Add sugar gradually and mix well. Add salt, ground ginger and cinnamon powder. Mix with semolina. Cool. Cut out cookie guides from cardboard like Christmas tree, stars and bells. Roll out cookie dough 1/8 thick. Use cardboard guides to cut out different shapes.
Put these cookies on to greased baking plates and cooked in a slow oven at 350°F till it becomes golden brown.

Flour – 1 ¾ cup
Brown Sugar – 1 cup
Cold Water – ¼ cup
Butter – 6 tbsp

Almonds -- ½ cup [blanched]

Method of the Preparation of the Christmas New Cookies

Cream the butter and sugar and add the cold water, mixing gently. Add the dry ingredients sifted together. Add the blanched almonds. Mix well with the hands and press into a long smooth sausage about 2 in diameter. Wrap in waxed paper and keep in refrigerator for overnight,

Put the water, butter, chopped fruits grated rinds and condensed milk in a pan and bring to boil, stirring continuously. Lower the heat and simmer for 5 minutes, still stirring.
Sift the salt and flour together in a bowl. Stir Bi-carb in to the cooled, cooked fruit mixture. Stir the fruit into the flour mixture and mix well. Pour the mixture into greased bake tin and bake at 325°F for 2 ½ hours.

Vermicelli Pudding Recipe

Wheat vermicelli – 2 cups
Milk – 2 liters
Sugar – 200 gms
Ghee – 4 tbsp
Cardamoms – 2 [crushed]

Method of the Preparation of Vermicelli Pudding

Heat ghee in a pan and fry the vermicelli until golden brown and keep aside. Boil the milk on low flame for 10-15 minutes. Add vermicelli and stirring regularly. When the milk and vermicelli thicken, add sugar and cook on low flame until the mixture thickens to a creamy consistency.
Remove from the fire and add crushed cardamoms and let the pudding cool. Place in refrigerator until cold and garnish with almonds and pistachios. This pudding can also be served hot.

Method of the Preparation of the Simple Christmas pudding

Soak the sago in milk for  2 hours. Beat the butter and the sugar. Add bread crumbs, dried fruits and soda to the hot milk and mix well. Pour into greased vessel and cover with a lid and steam for 3-4 hours on low flame. When it cools serve with custard.

Water – 2 cups
Corn flour – 2 tbsp

Tartaric acid – ½ tsp
Lemon essence – ½ tsp
Evaporated milk – small tin

Method of the Preparation of the Snow Pudding

Put the water, salt and sugar on to boil. Mix the corn flour with a little cold water and add to the boiling mixture, adding constantly till thick and transparent.
Remove from the fire and add tartaric acid and lemon essence. Leave to get cold. Beat the evaporated milk well, and add to the mixture. Serve with Custard.

Plain Flour [Maida] – 100 gms
Sugar – 180 gms [powdered]
Baking Powder – 1 tsp
Vanilla Essence – 1 tsp

Method of the Preparation of the Sponge Cake

Sieve together flour and baking powder. Beat the eggs mildly, and keep it in a vessel of boiling water and add the sugar little by little.  Keeping the vessel all the time in boiling water and beat it gently.
Melt the butter, and before it turns into ghee remove from fire. When it cools, pour it into the egg mixture. Add the vanilla essence and beat the mixture continuously. Take it out of the boiling water and add gently to the sieved flour. Immediately pour the mixture into a greased cake tin and bake in an oven of 400°F for 20 minutes. Let it cool. Take it out when it gets cold

Christmas Cake Recipe



Ingredients for the Christmas cake

Orange Peel – 50 gms
Cashew nuts – 50 gms
Raisins – 200 gms
Brandy 0r Rum – ¼ cup
Ghee or Butter – 125 gms
Sugar – 300 gms [powdered]
Dalda – 100 gms
Ground Orange peel – ¼ tsp
Egg’s Yolks – 4
Egg’s White – 4
Sugar – 3dsp
Plain Flour – 250 gms
Baking Powder – 1 tsp
Vanilla Essence – 1 tsp
Cinnamon – 3 pieces [powdered]
Cloves – 5 [powdered]
Milk – ¼ cup
Salt – 1 tsp
Lime Juice – 1 dsp

Method of preparation of the Christmas cake

Mix the dry fruits and the orange peel pieces and sprinkle the brandy or rum and keep aside for 1 hour. When it soaked, close the vessel and steam it for 10 minutes on low flame.
Heat 4 dsp sugar in a thick bottomed pan, till it becomes dark brown. Add ¾ cup of boiling water and stir without forming lumps. When it becomes one thread consistency remove from the fire and keep in a vessel of boiling water.
Beat the butter and dalda with powdered sugar till it becomes fluffy and soft. Add the essence and egg yolks one by one.  Add the orange peel paste. Add the prepared dry fruits with the mixture.
Sieve the plain flour, salt, baking powder and other powdered spices together. Add the flour to the creamed mixture, a small quantity at a time, alternating with little milk. Repeat the process till all the flour and milk are finished. Add caramel syrup and mix gently.
Beat the egg whites till it becomes fluffy. Add the lime juice and sugar and beat well. Add the fluffy egg white mixture to the batter.
Pour the batter into the greased tin and bake in a pre heated oven at 300°F till the cake is ready.
