Cheese Cake Easter Recipe

Ingredients for Cheese Cake

Eggless sponge cake -- 1 [small]
Cream cheese – 8oz
Sweetened condensed milk – 1 can
Lemon juice – ¼ cup
Fresh fruit pieces
Roasted nuts – 2 tsp
Vanilla essence – 1 tsp

Method of Preparing Cheese Cake

Mix cream, cheese and milk in a mixer. Stir in lemon juice and vanilla essence. Add fresh fruit pieces and roasted chopped nuts. Spoon mixture on to layer of cake slices in a baking tin. Chill two hours or until set.

Orange Coconut Topping


Ingredients for Orange Coconut Topping
Coconut – ½ cup [grated]
Juice of an orange
Butter – 1 tbsp
Castor sugar – 1 tbsp
Marmalade – 1 tbsp
Method of Preparing Orange Coconut Topping
Soak the coconut in orange juice. Cream butter and castor sugar well. Add marmalade and mix into orange juice mixture.
Spread over a cold cake and put under the grill to brown lightly.

Ingredients for Topping 

Crashed corn flakes – ½ cup
Brown sugar – ½ cup
Coconut – 1 cup
Method of Preparing

Melt the butter in a pan and add the topping ingredients, and spread the mixture on top of the hot baked cake. Return to the oven for two minutes or until the topping becomes golden brown. 

Pumpkin Sultana Cake Recipe


Ingredients for Pumpkin Sultana Cake

Butter – 3 oz
Self raising flour – 2 cups
Pumpkin – 1 cup [cooked and mashed]
Caster Sugar – 2/3 cup
Sultans – ½ cup
Milk – ½ cup
Vanilla essence – 1 tsp

Method of Preparing Pumpkin Sultana Cake

Cream butter and sugar. Add vanilla essence. Stir in the mashed pumpkin and mix well.  Add flour and salt alternatively with the milk to keep the mixture the correct consistency Add sultans.
Pour into greased oven and bake in a cool oven for 1 ½ hours. Allow to stand for 15 minutes before turning out, when quite cold, ice with lemon butter.

Ingredients for Beetroot Wine

Beet root – ¼ kg
Sugar – 1 kg
Orange juice – 1 cup
Juice of 1 lemon
Cardamoms –2
Cinnamon – 1 piece
Cloves – 3
Yeast – ¼ tsp

Method of Preparing Beet root Wine

Boil the chopped beetroot by adding enough water.  Strain in a muslin cloth. Make  the sugar syrup and allow to cool.  Mix  all ingredients  and keep in an airtight container.
Stir daily. After 5 days strain the wine  with a muslin cloth and fill in bottles.

Ingredients for Ginger Wine

Ginger – 250 gms [chopped]
Sugar – 1 kg
Juice of lemon
Yeast – ½ tsp
Cardamom – 3 [crushed]
Cloves—3 [crushed]
 Cinnamon – 1 piece [crushed]
 Caramelized sugar -- 2 tsp

Method of Preparing Ginger Wine

Boil the chopped ginger by adding enough water for 15 minutes on low flame. Strain and allow to cool.  Make sugar syrup  and allow to cool. Mix all the ingredients well . . Keep in air tight container for 5 days. Stir daily.
Filter the wine with a muslin cloth and add caramelized sugar. Stir well and fill in airtight bottles
Wine can be used after filtering

How to make Wine within 5 days


Ingredients for Wine within 5 days

Black Grapes   -- 1 kg
Sugar -- ¾ kg
Cinnamon -- 1 piece [crushed]
Cardamom -- 3 [crushed]
Cloves – 3 [crushed]
Whole wheat -- 2 tsp
Caramelized sugar -- 2 tsp

Method of the Preparation of Wine within 5 days

Wash the grapes and remove the stalks. Crush the grapes nicely with hands. Make the sugar syrup and allow to cool.
Mix all the ingredients in a ceramic jar and keep air tight for 5 days, stirring well every day. Open the jar and mix well and strain in a muslin cloth. Add caramelized sugar.
Fill in an airtight jar.

Prawn Snacks Easter Recipe


Ingredients for Prawn snacks

Prawns – 500gms [peeled and deveined]
Milk – 1 tbsp
Egg – 1
Plain flour
Bread crumbs
Oil for frying

Method of Preparing Prawn Snacks

Wash and cut the prawns. Beat the egg with milk. Dip the prawns the flour then in the egg mixture.
Dip each prawn in the bread crumbs and deep fry in the hot oil, till the prawns become golden brown.
Serve hot with tomato sauce.

Egg whites – 2 [[beaten stiffly]
Bread slices – 8
Butter –2 tbsp [melted]
Cheese – ½ cup [grated]
Spring onion – 1 tbsp [chopped]

Method of Preparing Cheese Canapes

Cut the bread slices diagonally.  Toast the slices one side and brush the other side with butter. Mix the rest of the ingredients. Spread the mixture on the buttered side of the toasted bread. Grill  till the cheese melts.

Mutton Bufath Easter Recipe


Ingredients for Mutton Bufath

Mutton – 500 gms [wash and cut into pieces]
Carrots – 250gms [cut into small pieces]
Green Peas – 250 gms
Potatoes – 3 [sliced]
Ginger – 1 piece
Garlic flakes – 6
Cloves – 3
Cardamom – 3
Dry Red Chilies – 5
Cinnamon – 1 piece
Vinegar – 2 tbsp
Tomatoes – 3 [chopped]
Coconut milk – 2 cups of milk
Onion – 3 [chopped]
Oil – ¼ cup
Salt to taste

Method Preparing Mutton Bufath

Grind, ginger, red chilies, Cardamom, cinnamon, cloves and garlic flakes in mixer grinder. Cook the meat, carrots and peas separately with salt.
Heat oil in a pan and fry the potatoes and remove. Put the chopped onions in the same oil and fry for 5 minutes. Add the ground paste and sauté again. Add the tomatoes and mix well.
Add the boiled meat, vegetables and coconut milk and cook for 5 minutes on low flame.
Serve the meat with fried potato slices

Bread Crumb Cookies Recipe


Ingredients for Breadcrumb Cookies

Self raising flour – 6 tbsp
Dry Bread Crumbs – ¾ cup
Almond Flouring – ½ tsp
Warm water – 3 tbsp
Sugar – 3 tbsps
Soda Bi-carb – ¼ tsp

Method of Preparing Bread Crumbs Cookies

Cream butter and sugar and mix in flour. Add bread crumbs and flouring. Dissolve Bi-carb in warm watered mix into the mixture. Make small balls and place on greased baking bowl, spacing them well apart.
Bake at 375°F for about 12-15 minutes.

Ingredients for Easy Eggless Cake

Plain Flour – 1 cup
Oil – ½ cup
Curd – ½ cup
Sugar – 1 cup
Baking Powder – ¾ tsp
Soda Bi-carb – 1 pinch

Method of Preparing  Easy Eggless Cake

Sift flour, baking powder and soda bi-carb. Blend the curd and sugar well
Add the oil and curd into the flour and mix gently. Pour the cake mixture into a greased baking bowl and bake in a pre-heated oven for 30 minutes at 180°c.
