Ingredients for Carrot Cake
Carrots – 1 ½ cups [grated]
Brown Sugar – 1 -1/3 cups
Water – 1- 1/3 cups
Whole Wheat Flour – 2 cups
Baking Powder – 2tsp
Raisins – 2 cups
Butter – 2 tbsp
Cinnamon Powder – 1 tsp
Salt – 1 pinch
Nuts – ½ cup [chopped]
Method of Preparation of the Carrot Cake
Boil carrots, sugar, water, and raisins for about 5 minutes. Add butter and cinnamon powder to hot mixture and mix well and allow to cool. Sift dry ingredients and add to the mixture gradually.
Add chopped nuts and bake for 50-60 minutes at 350°F.
